Just a quick one… Arancini

I’m a massive fan of Rachel Roddy’s writing and her recipes. (She also has my dream life, married to an Italian, writing about food for a living and splitting her time between Sicily and Rome).

The week her article in the Guardian had a recipe for arancini. These gorgeous rice balls are a favourite of mine and something I have been craving for weeks. I’ve attempted to make them before and they’ve never been quite right.

As it was bank holiday and I had time, my dinner plan went out of the window and I tried her recipe. it is absolutely perfect. As well as being easy to follow, the arancini are just like those I’ve had in Italy. The only change I made was to add a tiny pinch of ‘nduja to the centre, just for a bit of a kick.

If you’re looking for something new to try, please try this recipe. It seems a bit faffy but the end result is incredible and once you’ve mastered them you can fill them with a world of amazing flavours.
